the best chocolate chip cookies

Every year, I get requests to make one of the simplest recipes that’s classic yet so tasty! My chocolate chip cookies don’t have any special ingredients above and beyond the norm but the fluffy, gooey, soft consistency is what makes them look picture perfect and taste like a million bucks. Want to make them too? Read on — they’re going to change your world! My dad always said that my grandma’s chocolate chip cookies were the best and nobody else’s came close. Apparently, I’m close or better because he requests them now.

Best Chocolate Chip Cookies

Prep Time: 5 minutes

Total Time: 25-30 minutes

Yields approximately 2 dozen cookies

Ingredients:

  • 1/2 c. packed brown sugar
  • 1/3 c. granulated sugar
  • 1/2 c. softened butter
  • 1 egg
  • 2 tsp. vanilla extract
  • 1 1/2 c. all-purpose flour
  • 2 tsp. cornstarch
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 bag semi sweet chocolate chips (regular or mini)

Instructions:

 

  1.  Line a baking sheet with parchment paper (or these mats) and preheat oven to 350.
  2. Add paddle attachment to stand mixer and cream together brown sugar, granulated sugar, and butter.
  3. Add egg and vanilla and mix until just combined.
  4. Slowly add flour, cornstarch, salt, and baking soda and ensure it is mixed well.
  5. Turn the mixer off and remove the bowl. Fold in the chocolate chips by hand with a silicone spatula. There are a LOT of chocolate chips so it may take some cutting of the dough and continuous folding. Be patient—it’s worth it!
  6. The next step is absolutely crucial! Use a scoop to get the dough into the right size chunks and then roll into a ball. Place the entire sheet into the refrigerator for 10-20 minutes (10 is pretty adequate). This helps the ingredients come together a bit better and the butter isn’t as soft—that’s the key to keeping the good shape!
  7. Place into your oven for about 12 minutes (this time is perfect for my oven)! They’ll look fluffy, sort of slightly golden, and like they’re not quite done. They are, I promise! Do not leave them in there as they’ll get too hard and collapse.
  8. They’re perfect, aren’t they? This is the part where you get to enjoy one!
