one-pot shrimp + sausage cajun penne

This one-pot pasta dish is sure to not only feed, but please your entire family! If you enjoy a spicy zip to your food and are game for less cleanup (who isn’t?), this one’s for you.

Ingredients:

  • 1 lb penne pasta
  • 1 lb frozen or fresh shrimp (raw)
  • 3 tbsp butter (divided into 2 tbsp and 1 tbsp)
  • 1 1/2 tsp cajun seasoning (I like this one)
  • 1 lb kielbasa or andouille sausage (depending on your taste), cut into rounds
  • 2 tsp minced garlic (or more to taste)
  • 2 tsp crushed red pepper flakes (optional)
  • 1 tsp dried thyme
  • 1/2 c. reduced sodium chicken broth
  • 1/2 c. heavy cream
  • parsley, for garnishing

Instructions:

  1. Boil water in large pot.
  2. Add all of the penne pasta to the pot when the water comes to a boil. Follow the pasta directions to cook the pasta to al dente.
  3. Drain the pasta, keep aside.
  4. Melt 2 tbsp butter over medium heat; add 1 tsp cajun seasoning to the melted butter and stir thoroughly.
  5. Add shrimp to the pot and cook through, turning halfway.
  6. Remove shrimp from the pot once cooked, set aside. Keep liquid in the pot.
  7. Add additional butter and remaining cajun seasoning. Dump sausage into pot and stir 2-3 minutes.
  8. Add garlic, thyme, red pepper flakes (if using). Stir thoroughly.
  9. Dump chicken broth in and incorporate.
  10. Add heavy cream and stir thoroughly.
  11. Return shrimp to the pot and stir.
  12. Add penne and ensure it is coated in sauce throughout.
  13. Serve with parsley (dried or fresh) as garnish.
