I feel like I need about eight arms and three more hours around dinner time to accomplish all that needs to happen as I walk in the door after my full-time gig every night. Sometimes I remember to thaw the chicken, beef, shrimp, or whatever flavor of the evening we’re basing our main dish around and sometimes I don’t (I have priorities in the morning — like, Starbucks). When I don’t, we’re all a little more hungry and a lot more crabby (read: hangry) until the food reaches the table. Since we are in the stage between buying a house and moving in together, and registering for all of the fun things we’ve been holding out for as wedding gifts, it’s time we utilize the remaining dollars from our housewarming party to help us right now.
It’s no secret, Pinterest is getting so good at serving things up that you don’t know you need and I fell for their sneaky little trick. They’ve been ensuring Instant Pot pins are at the forefront of my feed anytime I open the app. It’s a barrage of images like the one you see above and/or graphics which advertise “Instant Pot Beef and Broccoli” or “Quick Instant Pot Healthy Dinners”. I can’t argue with the words quick AND healthy (oh, and INSTANT) in one title. I ignored it for about a month and continued my journey and personal quest of creating a menu with no repeated meals for a month (meaning, we can’t have tacos more than once a month). As I’m going through these food pins, I realize that probably 70 percent of them reference an Instant Pot. I have a Slow Cooker but that sounds like the opposite. So, what is an Instant Pot? I wasn’t quite sure either.
It’s basically a fancy pressure cooker. You can insert a variety of different things (not just fresh or frozen). You can also do popcorn kernels and even make your own yogurt! The Instant Pot has a number of settings dependent on what you’re putting in it, whereas, a slow cooker only has warm, low, and high. This thing has nearly as many buttons as my spaceship of an SUV! I read up on all of the functions of it and looked at some recipes that looked like stuff I’d make. Pretty much realizing you can put things into this pot and in between 15 and 30 minutes, your dinner is done (much of it is dump and go). You mean I can cook dinner AND throw loads of laundry in during a 30 minute span? Sign me up!
