Happy New Year! It is coooolllldddddd here in Minnesota right now and comfort food is on the mind. It’s the beginning of another year and the resolution train is in full motion — toooootttt toooootttt! Time to lighten up the menu and do it efficiently with one of the hottest kitchen appliances of 2017 (which will NOT be irrelevant in 2018 either!)
Ingredients:
Olive Oil Cooking Spray
2 lbs lean ground beef
2 1/2 tsp salt
3 cloves garlic
2 Tbsp dried marjoram
29 oz. can tomato sauce
black pepper, to taste
2/3 tsp paprika
3 c. reduced sodium beef broth
6 Tbsp raisins
2 bags cooked brown rice (or 3 c.)
1 large head green cabbage
Cooking Instructions:
1. Turn your Instant Pot onto the Saute function — add cooking spray to the inner pot.
2. Add the ground beef to the pot and brown
3. Add salt and pepper to the pot and incorporate into the meat
4. Add the garlic, dried marjoram, and paprika and mix into the meat and seasoning mixture well
5. Dump the can of tomato sauce, beef broth, and raisins into the Pot
6. Put your Instant Pot cover on, ensure the vent is positioned on “sealing” and press the Pressure Cook or Manual button and ensure it’s on high pressure — adjust to cook it for 15 minutes
7. Turn your Instant Pot off and Quick Release the pressure
8. Add your cooked brown rice to the pot and your chopped cabbage
9. Reposition the cover on the Instant Pot and set your vent to the sealing position once more
10. Press the Pressure Cook or Manual button and cook on High Pressure for 3 minutes
Makes approximately 8 servings — perfect for meal prep!
